50- Black Garlic and Balsamic Reduction:

Ingredients:

8 cloves black garlic, peeled and minced

1 cup balsamic vinegar

2 tablespoons honey or brown sugar (optional, for added sweetness)

Pinch of salt

Instructions:

Prepare Black Garlic Paste: Mince the black garlic cloves finely or mash them into a paste using a fork.

Combine Ingredients: In a saucepan, pour in the balsamic vinegar and add the minced black garlic. If desired, include honey or brown sugar for added sweetness.

Simmer: Place the saucepan over medium heat and bring the mixture to a gentle boil.

Reduce Heat: Once boiling, reduce the heat to low to maintain a gentle simmer. Stir occasionally to prevent burning or sticking.

Reduce and Thicken: Allow the mixture to simmer and reduce by about half, stirring occasionally. This process typically takes around 15-20 minutes. The reduction is ready when it has thickened enough to coat the back of a spoon.

Season: Add a pinch of salt to balance the flavors, if necessary. Taste and adjust the sweetness or seasoning according to your preference.

Cool and Store: Remove the Black Garlic and Balsamic Reduction from heat and let it cool to room temperature. It will continue to thicken as it cools. Transfer the reduction to a glass jar or airtight container for storage.
